Creamy, high-protein edamame avocado spinach dip for a delicious and easy spin on guacamole!

If you love guacamole and are looking for a way to sneak in some extra protein, let me introduce to you Edamame Avocado Spinach Dip! I know, I know hummus is the cool kid when it comes to legume dips, but today’s recipe shows off the lesser known cousin of chickpeas: edamame. In recent months, I’ve grown to really appreciate the mildly earthy, subtly nutty taste of edamame and its rockstar nutritional profile. Not only does edamame contain ample protein, but it is also high in fiber, calcium, and vitamin C. Avocado provides the creaminess for this dip making it similar to guacamole.
I additionally add a tablespoon of mayonnaise to turn it into more of a spread for wraps and sandwiches. You can substitute it with yogurt or a vegan alternative, if you choose, or simply leave it out and add a little olive oil until the dip reaches your preferred consistency.
This recipe is so easy and has a short ingredient list. Within minutes, you can whip up a batch of this healthy, tasty dip for a snack or as a component to your lunch prep or easy dinner, such as grain bowls. You could up the mayo by an extra tablespoon or two and use it to make egg salad that’s extra high in protein and flavor! I eat it by the spoonful, but it makes a perfect veggie/chip/cracker dip or omelet filling. You could easily turn it into a thick and tangy salad dressing by blending in more apple cider vinegar and using olive oil and water to thin it out. However you choose to eat it, this dip is sure to become a staple alternative to hummus, and hey, the green color is a pretty bonus!
EDAMAME AVOCADO SPINACH DIP (DF, GF, VG, SD)
Yield: approximately 1¼ to 1½ cups
What You'll Need:
1 cup shelled edamame, thawed if frozen
1 medium avocado
1 small bunch (or ½ large bunch) cilantro, stems cut off
2 small cloves garlic (or 1 large clove), chopped into quarters
1 tablespoon apple cider vinegar
1 teaspoon lemon pepper
¼ teaspoon sea salt, or to taste
Pinch crushed red pepper flakes (adjust to your own spice level preference)
1 tablespoon mayonnaise
Handful of spinach leaves
How To Make it
1. In a food processor or high speed blender, blend together edamame, avocado, cilantro, garlic, vinegar and spices. Scrape down sides, and blend again, making sure all the ingredients are combined well.
2. Add in the mayonnaise and pulse until incorporated, then blend in the spinach until the dip is smooth and creamy.
