Easy homemade granola with flavors inspired by honey bunches of oats cereal—honey, coconut, almond, and obviously oats!

The weather has been humid enough recently that my typical bowl of hot oatmeal just doesn’t quite sound appealing. Instead, I’ve been obsessed with cereal. The only problem with cereal is that it tends to either lack the nutritional density that keeps you full for more than 47 minutes or it comes with a price tag way too close to double digits. My solution has been to make granola, changing up the flavor to fit my vibes whatever they may be on any given Tuesday.
One of my favorite cereals as a kid was Honey Bunches of Oats. Something about the honey, almond, and coconut flavors just always hit the spot. If you’re like me, allow this honey bunches of oats granola to be your substitute. With less sugar and a much shorter ingredients list, this is “cereal” that will power you through until lunchtime. And the flavor is so nostalgic!
Granola is also so easy to make it’s almost embarrassing. The most difficult part for me is not burning it, but stirring it a couple times while baking does the trick. Actually, tbh, the most difficult part for me is not eating it all when it first comes out of the oven. 🙂
Let’s go through the ingredient list; most of these are pantry staples!
Oats - Rolled oats, not quick oats. Use certified gluten free if needed.
Honey - A good quality honey improves the flavor notably, but use whatever you have on hand.
Coconut Oil - Unrefined has the better coconutty flavor. If you are not a fan of coconut (my mom isn’t, and she still says this granola is addicting!) use refined coconut oil.
Shredded Coconut - I used fine shredded coconut that is sweetened.
Almond Extract - In my opinion, this is the best part of the flavor! Don’t skip!
Almonds - Just the raw thin slices of almonds, like in the boxed cereal.

HONEY BUNCHES OF OATS GRANOLA (GF, DF, VG)
What You'll Need:
5 cups rolled oats
1 cup raw sliced almonds
½ cup honey
½ cup coconut oil (softened but not melted)
½ cup sweetened shredded coconut
1 teaspoon almond extract
How To Make it
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, stir oats and almonds together. Set aside.
Combine honey and coconut oil in a small saucepan over medium-low heat until melted. Then add the coconut and almond extract. Stir.
Pour the liquid ingredients over the oats and stir.
Spread the granola mixture evenly on the baking sheet and bake for about 30 minutes. Stir at least twice to prevent burning, around the 15-20 minute mark and again at the 25 minute mark. Keep an eye on the granola after about 25 minutes. If your oven runs hot, it may not need the full 30 minutes. Remove from the oven and allow to cool. The granola will become crunchier as it cools. Store the granola in an air-tight container.
