Some mornings I inwardly (or outwardly) groan when my alarm sounds. Even though I’m a morning person, during the colder, darker months I’m especially inclined to snuggle under my duvet for five more minutes. But that’s not so much the case when I have a delicious breakfast awaiting me the moment I deign to emerge from my cocoon. 


Whatever time you like to greet the day, why not “break-the-fast” with something that’s equal parts hearty and delicious? This Brownie Baked Oatmeal doubles its nutritional content with the addition of quinoa, an all-star ingredient that contributes to this recipe’s fiber and protein content. That’s a winning combination that’s guaranteed to keep you feeling satiated and happy…because let’s be real, oatmeal that tastes like Cocoa Krispie's?! Seriously! That’s my kind of morning meal! 


This baked oatmeal is easy, too, and making one batch can last all week. Plus, you can cook the quinoa in advance to save time when assembling. Once cooked, the quinoa is blended in a food processor with most of the other ingredients and then poured over the oatmeal mixture. Then you mix, bake, and let the wafting brownie smell become the official cheerleader of your morning routine!


BROWNIE BAKED OATMEAL (GF, V, SD)


What You'll Need:

  • ½ cup quinoa, cooked for 20 minutes in 1 cup of water

  • ¾ cup cocoa powder

  • 6 tablespoons maple syrup + 2 tablespoons coconut sugar (or brown sugar)

  • 2 teaspoons vanilla extract

  • 2 ½ cups milk, dairy or non-dairy; personally, I like unsweetened almond milk or soy milk

  • 2 tablespoons ground flax seeds (sometimes labeled flax meal), soaked for 5 minutes in 2 tablespoons of water

  • ¼ cup applesauce, or melted coconut oil

  • 4 cups whole rolled oats

  • 2 teaspoons baking powder

  • ¾ teaspoon salt

How To Make it


  1. Preheat the oven to 350 degrees. Grease an 8X8 square casserole dish with coconut oil or other oil spray. 

  2. Place cooked quinoa, cocoa powder, maple syrup, sugar, vanilla extract, milk, soaked flax seed, and applesauce in the bowl of a food processor or blender. Process until mostly smooth, stopping once or twice to scrape down sides, making sure all of the contents are combined.

  3. In a large bowl, whisk together oatmeal, baking powder, and salt. Make sure baking powder is well dispersed throughout the oatmeal. 

  4. Pour the wet ingredients over the oatmeal and mix thoroughly.

  5. Empty oatmeal mixture into pan, and put into oven to bake. 

  6. Oatmeal should be nicely browned on top and should feel spongy to the touch. It should take around 35 minutes, but check at 30 minutes. 

  7. Let cool, then refrigerate until eating.
